Risotto is a class of Italian dishes of rice cooked in broth to a creamy consistency. It offers a great alternative to pasta and be enjoyed as a main course with the addition of shrimp, chicken or vegetable. The broth may be meat or vegetable although typically I use a chicken broth. This brings forward a rich flavor without the fat of a beef based broth. Many types of risotto contain Parmesan cheese, butter, and onion. It is one of the most common ways of cooking rice in Italy.Image
