Rice Noodles


12oz box rice pasta cooked and drained

¾ oz. dried porcini mushrooms

1 lb. canned plum tomatoes

1 finely chopped small onion

3 Tbsp. fresh Italian parsley, finely chopped

3 Tbsp. olive oil

Salt & Pepper

Fresh Parmesan cheese

Soak the mushrooms in water for 20 minutes In a sauce pan heat the oil and then sauté the onions until translucent, about 10 minutes. Next, place the tomatoes in a food processer to break into small chunks. Squeeze the excess water from the mushrooms, cut them into pieces and add them to the onions and mix in well. Add the tomato sauce mix in again and season to taste. Simmer the sauce for 15 minutes. When the sauce is cooked remove it from the heat and add the parsley. Toss with the pasta it until well combined. Serve hot with fresh grated Parmesan.

This dish is for mushroom lovers ,a simple tomato sauce enriched with dry porcini mushrooms.

Khao Soi / Thai Currie Noodle with Chicken
8 oz thin rice noodles
8oz boneless skinless chicken breast thinly sliced
1 tablespoon of red curry paste
1/2 cup of coconut milk
1 cup of chicken stock
1 tablespoon of chopped garlic
1 tablespoon curry powder
1 pinch of turmeric powder
2 tablespoons of fish sauce
1 teaspoon lime juice
Garnish:
Small bunch Cilantro chopped
2 tablespoons chopped peanuts
4 oz bean sprouts
Fresh lime wedges

Place noodles in boiling water until it is soft and strain it. To make the curry, put the coconut milk into a medium sized saucepan on medium-high heat before adding the red curry paste. Stir it until it simmers. Add remaining ingredients except chicken. Wait for a minute before adding chicken and cook until the chicken is well done. Pour the curry on the noodles and add what extra condiments you desire.

Fra Diavolo is the name given to a spicy sauce for pasta or seafood.. Most versions are tomato based and use chili peppers for spice, but the term is also used for sauces that include no tomato, or that use cayenne or other forms of pepper.
